Hawthorn Berry Preserve

One of the many ways you can enjoy these amazing berries is to make jelly with them. My favourite way to use the jelly is in smoothies and yogurt dishes. This gives added health benefits and flavour to these meals.

Recipe
In this recipe, I used honey as a sweetener you can you your choice of sugar of course.
10 cups hawthorn berries
3 cups honey
4 pouches of Knox gelatine
1 lemon
First rinse berries then add to a large pot and cover the berries with water until they start to float. Simmer for four to five hours until all berries are mashed into a paste. Strain with multiple strainers to be sure to remove all seeds. Then one final time through a gravity feed cheesecloth strainer. This may take up to 24 hours to let all the liquid flow out.
Once you have the product strained add to clean pot and add the honey or sugar and bring to a boil until all sugar has emulsified into the berries, then add juice from one lemon. Finally, remove from heat and stir in gelatin and add to clean sterilized jars.
Let sit aside to cool before putting it into the pantry.
