Sauteed Mosaic Puff Ball

This Asian inspired dish is a delight to the taste buds, I had foraged this beautiful fungus from a favorite mushroom location near my home in Lumby BC. Once I had hand-selected the perfect one it was time to bring it home and start to prepare lunch. This is an easy recipe to master and can be adapted to many dishes, I enjoy it with a topping of roasted sesame seeds.
Ingredients
1 large fresh puffball
1/4 cup sesame seeds
50 mL soya sauce
2 tablespoons Chinese five-spice
1/4 cup fermented black bean sauce
2 tablespoons rice vinegar
50 mL molasses or brown sugar
25 mL olive oil
How to prepare
Start by mixing soya sauce, black bean sauce, vinegar, molasses, and chinses five spice to a bowl. Mix until smooth and set aside. Start with washing and prepping puffball for frying, add 25 mL olive oil to a large frying pan preheat on medium heat, once the pan is warm start frying puffball pieces for 20 min or until golden brown. Roast sesame seeds for 20 min and as a topping with Hoisin sauce and serve.
